Founded by Chef James Chapman, formerly Head Chef for Tom Kitchin, our bakery is built on years of professional experience and a deep personal mission. After a Coeliac diagnosis, James missed eating so many gluten-containing foods and continues to be frustrated that so many gluten-free alternatives are nutrient deficient and ultra-processed.
So we have set out to reimagine what gluten-free could be and create food that is mindful, joyful and genuinely delicious.
At the heart 💛 of our bakery is Confelicity - the joy found in the happiness of others. We bake to bring people together, to offer kindness through food, and to make sure everyone has a seat at the table.
A compound of the Latin words ‘con’ ("with") and ‘felicitas’ ("happiness" or "good fortune"), literally meaning "shared happiness".
From freshly baked and naturally leavened sourdough bread to decadent sweet treats and mindful seasonal dishes, everything we make is crafted with care and just happens to be gluten-free.
